Ginger Murabba – Recipe

Select fibreless ginger and scrape it thoroughly. Cut into pieces if necessary. Boil in 0.5% citric acid solution under pressure ( 10 lbs) for 30 minutes to soften the pieces. Wash, prick and take the weight of the pieces, finally, give the sugar treatment as described in the case of Tuity fruity.
