Pineapple squash

Ingredients:

strained Pineapple juice................ 1 litre
sugar ............................................... 1.7 kg
water............................................... 1.3 litres
citric acid ...................................... 5-6 tsp
pineapple essence .......................... 1-11/2tsp
yellow colour ................................. a pinch
kms .................................................. ½ tsp
(potassium. meta Bi susulphite -- available in essence shop)


Method : Mix sugar, water and citric acid. Heat to dissolve while stirring. filter the syrup and with the juice. Add essence, colour and kMS. Store in clean and sterilized narrow mouthed bottles.

The same recipe can be used for other juicy fruits also, such as grapes, oranges sweet lemons etc. (in the case of orange squash, fruit juice should be mixed after cooling the syrup)
